Everybody loves a warm tasty soup, especially on a cold day.

It’s hard not to love them – they are easy to make – so even the most inexperienced cooks can easily learn to make them – and yet, with a few simple ingredients, they can be made into sophisticated dishes to impress your family and friends.

Plus, eating vegetable soups is actually considered one of the best solutions (right after vegetable salads) to thinner waistlines and improved immunity and health.

Many vitamins and minerals are water soluble, and a significant percentage of these nutrients can be lost through conventional cooking methods. But when you cook a soup, most nutrients and minerals are kept in the broth.

That’s why Dr. Joel Fuhrman, M.D., my favorite doctor and author of the “Eat to Live” and “Super Immunity”, considers vegetable soups (along with salads), to be the basis of a nutrient dense, healthy diet.

Yes, you should eat a lot of raw foods – including drinking lots of green smoothies that I love and highly recommend, because many nutrients are destroyed by cooking. But some nutrients are actually more absorbable after cooking, especially if you don’t throw away the cooking water.

So if you’re going to cook anything at all, you better make it a soup!
